The Super Rugby leaders have logged 14 points from a possible 15 so far in this year's tournament after winning their opening three matches, with Jordaan scoring tries against the Bulls and Lions.
However the 22-year-old will now miss upcoming matches against the Reds, Bulls and Waratahs.
“Centre @PaulJordaan12 has had a scope to his knee and will be out of action for approximately a month. #BlackAndWhite,” read a tweet from the Sharks on Tuesday.
Jordaan was part of the South Africa U20 side that won the IRB Junior World Championship in 2012.
